Fall is here, school has begun, and football has returned. Whether you’re watching the game at home or heading down to the stadium for a tailgate, it’s important to have the best snacks. 4 tablespoons safflower oil
2 tablespoons fresh lemon juice
1/2 teaspoon coarse salt
4 garlic cloves, minced
1 to 2 pickled jalapeno chiles, minced
2 medium tomatoes, finely chopped
1 medium chopped onion
6 scallions, thinly sliced
6 ounces pitted black olives, chopped
2 ripe avocados, halved, pitted, and peeled
2 cans pinto beans, drained
1 cup shredded cheddar cheese
1 cup plus 2 tablespoons sour cream
Start your dip by sautéing your onions and garlic. Add the safflower oil to a pan, and cook the onions until they’re translucent. Add in the beans and cook them for a few minutes, smashing them up a bit.
In a separate bowl, combine a couple of tablespoons of onions with tomatoes, and salt. Mix them together and set the Pico de Gallo aside. In another separate dish, make an avocado spread with the avocados, sour cream (two tablespoons), jalapenos, and lemon juice. Mash them together.
Using a large dish, layer the mixtures. Start with the beans on the bottom followed by a layer of cheddar, a layer of scallions, a layer of Pico de Gallo, a layer of the avocado mixture, a layer of sour cream, and a layer of olives. Serve the dip with your favorite tortilla chips, and enjoy with family and friends.
