To Die For Summer BBQ: Margarita Chicken

If you’re like many people who don’t want to heat up the house when it’s sizzling outside, the barbecue grill probably becomes your family’s best friend. When you’re sick of the grilling or smoking the same old things, consider a new spin on grilled chicken.

This simple recipe comes from Disney Family. Assemble the ingredients in advance and allow the chicken to marinate overnight. It is easy to make, but fancy enough to serve to guests at your next summer BBQ.

Combine the following ingredients in a one gallon zippered bag and shake well so that the ingredients are well blended:

The zest of one lime

1/3 cup of freshly squeezed lime juice

1 teaspoon of Chile powder

2 mashed cloves of garlic

¼ cup of Extra Virgin Olive Oil

2 tablespoons of freshly chopped cilantro

2 tablespoons of Tequila

Place 2 pounds of boneless skinless chicken breasts, halved and sprinkled with salt and pepper in the zippered bag and refrigerate overnight.

Spray the grill grate with a non-stick grill spray. When the grill is hot enough, place the chicken breasts on it. Cook each breast side for 4 to 5 minutes, but rotate to make sure that the entire chicken breast is cooked thoroughly.
