Treat Yourself to a Winter BBQ Chicken Dish From Your Oven

So it’s the dead of winter in Texas, but somehow the cold makes you crave the flavor of a delicious BBQ meal.  But you don’t want an ordinary burger for your trouble, you want something that’s mouthwatering, and screams outdoor BBQ even though you’re cooking it in a casserole dish.

When you mention cooking chicken for a BBQ dish, many people think about cooking the breast, but this recipe is going to use the thigh because the meat tends to be a little more tender and juicy because it’s the darker meat of the bird.

For this dish we’re going to use eight pieces chicken, about 2ozs of butter, one tablespoon of oil, and one whole lemon sliced.

You’re going to combine all the ingredients for the sauce together in a fry pan melting the butter and oil simultaneously then add your chicken and cover the pan. Cook for about 10 minutes turning the chicken until it’s a nice golden brown color.

Now for that delicious BBQ sauce that’s going to shake up your taste buds, you’re going to use the following ingredients:

  • 1 onion chopped
  • 1 tablespoon of oil
  • 2oz light brown sugar
  • 1 heaped teaspoon English mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • ½ pint water
  • Freshly ground salt and pepper
  • 1 sliced lemon

Get that BBQ sauce started by the oil in a saucepan, and then add the onions and fry them up for about 4 minutes until they turn transparent. Stir in the tomato paste and the other ingredients and bring this lovely concoction to a boil, and then cook on a low heat for about 10 minutes.

Turn on your oven and preheat to 350, while you do that, take that lovely golden check and place it in the casserole dish, and add that scrumptious BBQ sauce all over that chicken and add those slices of lemon on top and cook for about an hour.
